Cheesy Bacon Onion Dip
This is one of the greatest dips that I’ve ever devised. It’s creamy, cheesy, bacony, and onion-y. This is a fantastic dip to make during the Superbowl or any big game. This is the perfect dip to eat, any time.
Ingredients:
2 blocks of Cream Cheese
2 medium Onions
1- 4 oz can of fire-roasted green chilis (drained)
Your Favorite Savory BBQ Rub
Your Favorite Sweet BBQ Rub
Reduced Sodium Beef Broth Concentrate
Worcestershire Sauce
1 cup of Mayo
Grated Parmesan Cheese 5 oz
3 oz shredded gruyere cheese
3 oz shredded sharp cheddar cheese
1 pound of bacon (cooked and chopped/crumbled)
2 tablespoons unsalted butter
Instructions:
Preheat your smoker to 350 degrees
Place onions and Cream cheese into an aluminum pan
Score the onions, add around a half tablespoon of liquid beef broth to bother onions. Season with both of the seasonings
Add a pad of butter to the top of each onion
Score cream cheese and top with around a 1/2 teaspoon of Worcestershire sauce each.
Season with both seasonings
Place the aluminum pan into the smoker for 30 minutes
Remove from smoker and let onions cool down for 5 minutes
Once onions have cooled down enough to safely chop, chop onions.
Add chopped onions back in with the cream cheese in the aluminum pan
Add to the aluminum pan the green chilis, mayonnaise, and the rest of the cheeses.
Mix together and taste for seasoning. Add more seasoning if necessary
Return to the smoker for 30 minutes
Open the smoker and top the dip with the cooked and chopped bacon
Cook for 10 more minutes
Remove and serve with thick chips or toasted baguette
