Chicken Wings. Smoked (or oven baked) and Crispy! On the Recteq
I love wings. I love smoked wings but, I was missing the crispy exterior of friend chicken wings. I found an awesome way to get crispy smoked chicken wings WITHOUT deep frying them. It’s a Christmas MIRACLE!!!!
Ingredients:
2 Pounds of raw chicken wings
1/2 cup corn starch
2 Tablespoons of your favorite bbq seasoning (I’m using a combo of Heath Riles Garlic Jalapeno rub and Honey Siracha Rub)
*Optional- BBQ Sauce to sauce the wings when they are done
Directions:
Separate whole wings into pieces by cutting through the joint with a sharp knife; also remove the wing tips from the flat portion. (skip this step if using party wings).
Mix rub and cornstarch.
Place wings in bags and shake to evenly coat.
Fire up the Recteq smoker or your oven (or any pellet grill) to 425º F and preheat for approximately 20 minutes.
Spray your cooking rack with cooking spray to prevent sticking
Place wings on top of a wire cooking rack.
Once the temperature of the smoker or oven has reached 425º cook wings for 10 minutes then flip them. Continue to cook and flip them for around 30 minutes or until the exterior is free of any corn starch and is crispy
Remove from the smoker and dust them with some more bbq seasoning or sauce them with your favorite BBQ sauce
Serve with your favorite dipping sauce

Chunky Blue Cheese Dipping sauce recipe:
1 cup Mayo
1/2 cup Sour Cream
4oz Crumbled Blue Cheese
1 Tablespoon Lemon Juice
1 Teaspoon chipotle powder
1 Teaspoon of your favorite BBQ seasoning
Mix all of the ingredients together in a bowl and refrigerate for 1 hour before serving.
