Crème Brûlée
One of the most famous desserts in the world. Crème Brulee is by far one of my favorites and if I see crème Brulee on a dessert menu, I’m getting it every time. Crème Brulee is sweet, smooth and crunchy, and absolutely delicious.
Ingredients:
2 cups heavy cream
1 vanilla bean, split lengthwise, or 1 teaspoon vanilla extract
⅛ teaspoon salt
5 egg yolks
½ cup sugar, plus extra for the brulee’ing part
Instructions:
Heat oven to 325 degrees
In a saucepan, combine cream, vanilla bean, and salt and cook over low heat just until hot.
Remove the saucepan from the heat and set it aside while you make the egg mixture
If you are using Vanilla extract, add it now
Add your yolks to a bowl and add in the sugar.
Mix together until the mixture becomes a light yellow
Remove the vanilla bean from the cream
Add a 1/4 cup of the cream to the egg mixture, stir constantly.
Stir in the rest of the cream until completely combined
Place 4 ramekins inside a baking dish
Pour the custard in the ramikens
Fill the baking dish with hot water halfway up the ramekins
Bake for 30-40 minutes
Let cool and then cover with plastic wrap and chill in the refrigerator for at least 8 hours
Before serving top the custard with 3/4 tablespoon of sugar.
Use a cooking torch to melt the sugar while rotating the ramekin in your hand.
If you don’t have a cooking torch place ramekins in a broiler 2 to 3 inches from the heat source. Turn on broiler. Cook until sugar melts and browns or evenly darkens, around 5 minutes
