Hasselback Chicken
Hasselback chicken is just another reason to put a lot of cheese and bacon with chicken. This is a straightforward recipe to make and is a giant crowd pleaser.
Ingredients:
Four chicken breasts
4 oz shredded sharp cheddar cheese
4 oz shredded Monterey jack cheese
1 pound of bacon, cooked
3/4 cup heavy cream
2 tsp of your favorite BBQ seasoning
2 jalapenos, diced
1 brick of cream cheese (room temperature)
Several slices of your favorite cheeses to put in between the slits in the chicken
Instructions:
Preheat your smoker to 350 degrees
Take your chicken breast and make slices halfway through the chicken 1/2 an inch apart.
Massage in 1 teaspoon over all of the chicken, be sure to get it into the slices as well.
Cut each bacon slice into thirds.
Alternate placing bacon and your sliced cheese into the slits of the chicken
Chop up the remaining bacon
In a mixing bowl combine, cream cheese, jalapenos, bbq seasoning, heavy cream, shredded Monterey Jack, and cheddar cheese.
Top your chicken with the cheese mixture
Place into your smoker for 40 minutes or until your chicken reaches an internal temperature of 165 degrees.
