Spaghetti Carbonara

I love Italian food. I had legit spaghetti carbonara one time and fell in love. Ever since then I’ve been on a mission to find a carbonara recipe that is just as delicious. This is the carbonara recipe I’ve been waiting for!

Ingredients:

  • 12 oz Spaghetti

  • 7 oz guanciale (or pancetta or thick cut bacon)

  • 2 whole eggs

  • 4 egg yolks

  • 4 ounces of pecorino romano cheese

  • Ground black pepper to taste

Directions:

  • Cut the guanciale into small cubes

  • Simmer in a pan over medium heat until lightly browned and cooked through

  • Turn off heat and set pan aside (do NOT drain oil)

  • Mix eggs and cheese together

  • Cook your pasta until al dente

  • Drain the pasta and add spaghetti to the pan with the guanciale

  • Turn heat to high and toss the spaghetti with the guanciale and oil

  • When the spaghetti and guanciale are sizzling, remove the pan from the heat

  • quickly add your egg cheese mixture and stir together until the cheese has melted

  • If you notice that the carbonara is too liquidy add more cheese.

  • Top with freshly ground black pepper and more cheese

  • Serve immediately
