Spaghetti Carbonara
I love Italian food. I had legit spaghetti carbonara one time and fell in love. Ever since then I’ve been on a mission to find a carbonara recipe that is just as delicious. This is the carbonara recipe I’ve been waiting for!
Ingredients:
12 oz Spaghetti
7 oz guanciale (or pancetta or thick cut bacon)
2 whole eggs
4 egg yolks
4 ounces of pecorino romano cheese
Ground black pepper to taste
Directions:
Cut the guanciale into small cubes
Simmer in a pan over medium heat until lightly browned and cooked through
Turn off heat and set pan aside (do NOT drain oil)
Mix eggs and cheese together
Cook your pasta until al dente
Drain the pasta and add spaghetti to the pan with the guanciale
Turn heat to high and toss the spaghetti with the guanciale and oil
When the spaghetti and guanciale are sizzling, remove the pan from the heat
quickly add your egg cheese mixture and stir together until the cheese has melted
If you notice that the carbonara is too liquidy add more cheese.
Top with freshly ground black pepper and more cheese
Serve immediately
