Ba-Corn

You can't go wrong when the main ingredients are, corn, bacon and cheese. Make this for your next party and you will be the party food hero.

Ingredients:

  • 8 ounces bacon, chopped (around 6 strips of bacon)

  • 2 (16 ounce) packages frozen sweet corn, thawed

  • 4 cloves minced garlic

  • 1 bunch green onions

  • 2 jalapeno peppers

  • salt and freshly ground black pepper to taste

  • 1/2 tsp of chipotle powder

  • 1 cup heavy cream

  • 1/4 cup of mayonaise

  • 1/4 cup of sweetened condensed milk

  • 6 ounces shredded mozzarella cheese

Directions:

  • Cook bacon in a 10-inch cast iron skillet over medium-high heat, stirring occasionally, until almost crisp and fat is rendered

  • Add 1/2 of the corn to the skillet with the bacon Cook and stir until kernels just start to turn golden brown

  • Add garlic, green onions, and jalapenos cook until vegetables start to soften

  • Season with salt, pepper, and chipotle powder

  • Add heavy whipping cream, mayonnaise and sweetened condensed milk stir and bring to a boil

  • Stir in the remaining corn until heated through.

  • Turn off the heat

  • Mix in 2/3 of the cheese until melted

  • Add the remaining cheese on top

  • Broil in the oven until heated through and top is browned
