Double Bacon Jalapeno Poppers
Ingredients:
6 Jalapenos
1 Cream Cheese ( room temperature)
1/2 cup sharp cheddar cheese
1 Tablespoon bbq seasoning
6 strips of bacon for the mix (cooked and chopped) Reserve some of the bacon to top the jalapeno poppers at the end.
2 tablespoons of BBQ sauce (for brushing on top of the poppers)
Directions:
Cut Jalapenos lengthwise leaving as much of the stem as possible
Remove the seeds and pith from the jalapenos
In a bowl mix together; cream cheese, bacon, bbq seasoning, cheddar cheese
Add mixture to the jalapenos being sure not to over stuff the jalapeno
Place Jalpenos on top of a oven safe wire rack that is on top of a baking sheet
Put jalapenos in a 400 degree oven for 20 mins
Remove from the oven and brush on bbq sauce and top with a slice of cheddar cheese
Put back in the oven until the cheese is melted
Sprinkle jalapenos with the last of the bacon
Serve with blue cheese or ranch dressing… or nothing at all
