Double Bacon Jalapeno Poppers

Ingredients:

  • 6 Jalapenos

  • 1 Cream Cheese ( room temperature)

  • 1/2 cup sharp cheddar cheese

  • 1 Tablespoon bbq seasoning

  • 6 strips of bacon for the mix (cooked and chopped) Reserve some of the bacon to top the jalapeno poppers at the end.

  • 2 tablespoons of BBQ sauce (for brushing on top of the poppers)

Directions:

  • Cut Jalapenos lengthwise leaving as much of the stem as possible

  • Remove the seeds and pith from the jalapenos

  • In a bowl mix together; cream cheese, bacon, bbq seasoning, cheddar cheese

  • Add mixture to the jalapenos being sure not to over stuff the jalapeno

  • Place Jalpenos on top of a oven safe wire rack that is on top of a baking sheet

  • Put jalapenos in a 400 degree oven for 20 mins

  • Remove from the oven and brush on bbq sauce and top with a slice of cheddar cheese

  • Put back in the oven until the cheese is melted

  • Sprinkle jalapenos with the last of the bacon

  • Serve with blue cheese or ranch dressing… or nothing at all
