Birria Tacos

These tacos are messy, they are juicy and they are absolutely bursting with flavor! These are definitely one of my favorite types of tacos!

Ingredients:

  • 5 lbs chuck pot roast

  • 2 white onions

  • 4 roma tomatoes

  • 1 bunch cilantro

  • 12 New Mexico chile pods

  • 10 guajillo chile pods

  • 2 Pasilla chile pods

  • 5 chile de árbol

  • 6 bay leaves

  • 17 garlic cloves

  • 5 whole cloves

  • Ginger (around an inch piece)

  • Cinnamon stick (around 1 inch piece)

  • 2 tsp toasted sesame seeds

  • 1/2 tsp whole black peppercorns

  • 2 tsp oregano

  • 2 tsp whole cumin

  • 2 tsp thyme

  • 1/4 cup white vinegar

  • Salt

  • Tortillas

  • Cheese (Please use Oxaca cheese if possible)

Directions:

  • Cut your beef into 4 equal(ish) sized pieces

  • Add meat, one whole onion 7 garlic cloves and 2 bay leaves to a large pot and 2 tablespoons of salt ( I used an 8 quart pot)

  • Fill pot with water until the meat is completely submerged. (I filled my pot about 3/4 of the way up with water)

  • On medium high heat, bring the water to a boil. (It will take around 2-2.5 hours before you are done boiling the meat)

  • Remove the stems and deseed all of your chilies

  • Rinse them very well and then add them to a pot

  • Add enough water to cover the chilies

  • On medium high heat boil the chilies until they become soft (around 20 to 30 minutes)

  • When they are softened, remove from the water and set aside to let cool for 20 minutes

  • Add all the chilies, remaining garlic, cloves, beef broth, cinnamon stick, pealed ginger, remaining bay leaves, seasame seeds, oregano, whole cumin, white vinegar, thyme, 1/2 tablespoon of salt, and pepercorns.

  • Blend until smooth, if you don’t have a powerful blender use a strainer to remove any large chunks.

  • Remove onion and bay leaves from the pot with the meat in it

  • Add the sauce you just made in the blender to the pot with the meat and water

  • Boil together for 20-30 minutes or until the meat is easily pulled apart and tender

  • Remove the meat and set aside to cool

  • Reserve 1 cup of the liquid in the pot for coating your tortillas later

  • Boil your tomatoes for around 3-5 minutes

  • Blend your boiled tomatoes unit smooth

  • Add the blended tomatoes to the sauce in the pot

  • Let simmer for 5 minutes

  • After the meat has cooled and can be safely handled, shred with your hand. Remove any fat or inedible pieces

  • Add the shredded meat back to the pot and let simmer on medium low for 10 minutes
