Smash burgers are all the rage right now. I wanted to kick it up a notch and add ground bacon with the ground beef to make the ultimate smash burger! If you want to impress your friends or family whip up a smash burger infused with bacon.

Ingredients:

  • 1lb Ground beef (80/20 works great)

  • 1/2 lb Bacon

  • Salt

  • Pepper

  • American Cheese

  • Oil to grease the griddle or pan

  • Onions and Mustard are optional

Directions:

  • Cut bacon into chunks

  • Place bacon into a food processor and pulse until the bacon resembles ground beef

  • Add bacon with ground beef and mix together with your hand until well combined

  • For meat into balls that are a little bigger than a golf ball

  • Set on a lined cooking sheet and cover with plastic wrap

  • Place cooking sheet into the refrigerator until ready to cook (I don’t go longer than an hour in the refrigerator)

  • Set heat to high on your griddle or pan

  • Add a thin layer of oil

  • When the surface begins to smoke add your meatball

  • Place a square piece of parchment paper on top of the meatball and smash it down with a metal spatula

  • Smash the meat down until evenly flat around a 1/4 of an inch

  • Remove the parchment paper and lightly dust with salt and pepper

  • *Optional add onions and/or mustard

  • When you see the edges of the meat begin the brown flip the burger over

  • Add cheese

  • Once the cheese is completely melted remove the burger and place it onto a toasted hamburger bun

ENJOY!!!!

Cheddar Cheese Sauce:

  • 8 oz. Velveeta, cut into small cubes

  • 4 American cheese slices, torn into small pieces

  • 5 Tbl. milk

  • 2 Tbl. butter

  • 1/4 tsp. apple cider vinegar

  • 1/8 tsp. dry mustard

  • 1/16 tsp paprika

  • 1/2 tsp chipotle powder

Warm all ingredients in a saucepan until smooth and delicious. Once this sauce cools it will thicken up drastically.

KEEP WARM UNTIL READY TO EAT
