Smoked Armadillo Eggs Wrapped in Bacon!
Sometimes you have to get a little crazy when you have a smoker. I’d heard whispers of the armadillo eggs and decided to dip my toes into the crazy world of jalapenos encased in meat and stuffed with cheese. These smoked armadillo eggs will take your cooking cred to the next level. Make smoked armadillo eggs for your next get-together, or make it for yourself.
Ingredients:
1 lb ground pork
4 tablespoons of your favorite bbq seasoning
6 strips of bacon
1/2 block of cream cheese
6 jalapenos
4 oz of cheddar cheese
Instructions:
Preheat your smoker to 250 degrees
Cut the top off of your jalapeno and remove the core and seeds
In a bowl, mix together cream cheese, cheddar cheese, and 1 tablespoon of BBQ seasoning
Place the cheese mixture into a sandwich size zip lock bag and cut off one of the corners
Fill the jalapenos up with the cheese mixture
In a mixing bowl mix together ground pork and 3 tablespoons of bbq seasoning
Take 1/6 of the ground pork and wrap it around a jalapeno, repeat 5 more times.
Place the armadillo eggs into the smoker and smoke until the ground pork has reached 165 degrees
If you like your bacon a little more crispy, crank up your smoker to 450 and cook for an additional 2 minutes
