Smoked Salsa Verde
I love me some salsa verde. I decided to take things up a notch and smoke the tomatillos before blending all the ingredients together. It turned out to be a fantastic smoked salsa verde. I used my Recteq RT-700 to smoke my tomatillos. This is great as a standalone dip or put on top of a burger or some tacos.
Ingredients:
12 medium-sized tomatillos
2 jalapenos
1 garlic clove
1 shallot (rough chopped)
Salt and Pepper to taste
1 tablespoon apple cider vinegar (optional) if you like your salsa a little sourer
Instructions:
Preheat your smoker or oven to 250 degrees F
Remove the outer paper from the tomatillos and rinse well
Slice tomatillos into 1/4s
Cut the stem off of the jalapenos and cut in half lengthwise
Place tomatillos and jalapenos onto a baking sheet
Sprinkle lightly with salt and pepper
Place the baking sheet into your smoker or oven for 90 minutes or until the tomatillos are soft
Place the tomatillos, jalapenos, and the rest of the blender and pulse until you get your desired consistency
Taste for seasoning and add more salt or pepper if necessary
