Smoked Salsa Verde

I love me some salsa verde. I decided to take things up a notch and smoke the tomatillos before blending all the ingredients together. It turned out to be a fantastic smoked salsa verde. I used my Recteq RT-700 to smoke my tomatillos. This is great as a standalone dip or put on top of a burger or some tacos.


Ingredients:

  • 12 medium-sized tomatillos

  • 2 jalapenos

  • 1 garlic clove

  • 1 shallot (rough chopped)

  • Salt and Pepper to taste

  • 1 tablespoon apple cider vinegar (optional) if you like your salsa a little sourer


Instructions:

  • Preheat your smoker or oven to 250 degrees F

  • Remove the outer paper from the tomatillos and rinse well

  • Slice tomatillos into 1/4s

  • Cut the stem off of the jalapenos and cut in half lengthwise

  • Place tomatillos and jalapenos onto a baking sheet

  • Sprinkle lightly with salt and pepper

  • Place the baking sheet into your smoker or oven for 90 minutes or until the tomatillos are soft

  • Place the tomatillos, jalapenos, and the rest of the blender and pulse until you get your desired consistency

  • Taste for seasoning and add more salt or pepper if necessary
