Twice Smoked (or Baked) Potatoes
Twice baked potatoes can only be made better by smoking them. I decided to turn these into twice smoked potatoes. They make the perfect side dish to any BBQ. They are bursting with flavor! Smoked on the Recteq RT-700
Ingredients:
6 baking potatoes
2 cups shredded cheddar cheese
6 oz. cream cheese
½ stick butter
1 Tablespoon your favorite rub seasoning
1 pound of bacon (cooked and crumbled)
½ c heavy cream
2 -3 Tablespoons
Salt and pepper
Instructions:
Preheat your smoker (or oven) to 250 degrees
Wash potatoes
Use a fork and poke holes in the potatoes
Lightly coat with olive oil and then sprinkle with an even mixture of salt and pepper
Put in smoker at 250 degrees for 3 hours
Cut potatoes in half and scoop out the insides into a bowl
Mix in cream cheese, 1/2 of the bacon, BBQ rub, butter, heavy cream and 1 c. of cheddar cheese with potatoes
Stuff back into the potato skins
Top with remaining cheese and bacon
Put back into the smoker for 30 min until the cheese is melted
Remove from smoker and top with diced green onions
