Western Potato Rounds

A deliciously simple appetizer to bring to any party.

Ingredients:

  • 1 Large russet potato

  • 6 oz sharp cheddar cheese

  • 6 slices of bacon (cooked until crispy and roughly chopped)

  • Olive Oil

  • Salt

  • Pepper

  • BBQ Sauce

Instructions:

  • Rinse off russet potato. Slice into rounds 1/8 inch thick

  • Line a baking sheet with tinfoil. Brush on a light layer of olive oil

  • Place the potatoes onto the oiled sheet

  • Brush another light layer of oil onto the tops of the potato rounds

  • Lightly sprinkle salt and pepper onto the potato rounds

  • Place into a preheated 450 degree oven for about 20 minutes or until the potato rounds are golden brown.

  • Remove from oven

  • Brush on your favorite BBQ sauce

  • Add Cheese

  • Add bacon

  • Place under a broiler until the cheese is melted.

  • DON’T TAKE YOUR EYES OFF THE POTATO ROUNDS WHILE UNDER THE BROILER. THEY WILL BURN VERY QUICKLY IF YOU DON'T PAY ATTENTION.

  • Let cool for 5 minutes before eating.

  • Serve with sour cream.
