Western Potato Rounds
A deliciously simple appetizer to bring to any party.
Ingredients:
1 Large russet potato
6 oz sharp cheddar cheese
6 slices of bacon (cooked until crispy and roughly chopped)
Olive Oil
Salt
Pepper
BBQ Sauce
Instructions:
Rinse off russet potato. Slice into rounds 1/8 inch thick
Line a baking sheet with tinfoil. Brush on a light layer of olive oil
Place the potatoes onto the oiled sheet
Brush another light layer of oil onto the tops of the potato rounds
Lightly sprinkle salt and pepper onto the potato rounds
Place into a preheated 450 degree oven for about 20 minutes or until the potato rounds are golden brown.
Remove from oven
Brush on your favorite BBQ sauce
Add Cheese
Add bacon
Place under a broiler until the cheese is melted.
DON’T TAKE YOUR EYES OFF THE POTATO ROUNDS WHILE UNDER THE BROILER. THEY WILL BURN VERY QUICKLY IF YOU DON'T PAY ATTENTION.
Let cool for 5 minutes before eating.
Serve with sour cream.
