Bacon Jam
This may be one of the greatest condiments/dips/meals every created. What more can you say? Bacon and jam. Bacon jam takes a little bit of time to make but, one you are done you will be so happy you took the time to make it. GO BACON JAM!
Ingredients:
1 1/2 pounds bacon chopped
2 teaspoons butter
4 large yellow onions, diced
1 teaspoon salt 1/2 cup brown sugar
1/4 cup sherry vinegar
1 1/2 teaspoons dried thyme
1 teaspoon freshly ground black pepper
1/2 teaspoon chipotle powder
1/2 cup water
2 teaspoons balsamic vinegar
2 teaspoons extra-virgin olive oil
Salt to taste
Directions:
Cut bacon into around 1 inch wide pieces
Place bacon into a large pot and heat at medium high until the bacon is foamy on top and crispy
Strain bacon grease out of the pot and set bacon on a paper towel to cool
Add 2 tablespoons of bacon grease into the pot where you cooked the bacon
Add butter, onions, salt, pepper, chipotle powder and water
On medium heat cook onions until they are soft and translucent
Chop up the cooled down bacon into small pieces
Add brown sugar, sherry vinegar, bacon and thyme to the onions
Cook on medium heat until the bacon jam becomes a light mahogany color and the texture of jam
Turn off heat
Mix in balsamic vinegar and olive oil
Let come to room temperature and serve with toasted baguettes
