St. Louis Smoked Spare Ribs

Ingredients:

  • 2 racks pork spare ribs

  • 1 all purpose salt and pepper based rub ( I used Heath Riles Garlic and Jalapeno rub)

  • 1 sweeter based rub ( I used Voodoo BBQ rub by Meat Church BBQ)

  • *Optional Spicy based rub (I used the sriracha honey rub found at Sams club)

  • 1 stick of butter

  • 1/2 cup bbq sauce

  • 1/2 cup brown sugar

  • Honey

  • Mustard

  • 1/2 cup apple juice (room temperature)


Instructions:

  • Trim the ribs of excess fat or sinew and pull the membrane off the back.

  • Remove the last 2 small ribs and square the rack as seen in the YouTube video

  • On each side of the ribs:

  • Lightly coat the ribs with yellow mustard

  • Light layer of the salt based rub

  • Liberal layer of the sweet based rub

  • Light layer of the spicy based rub

  • Let the ribs sit out for about 15 mins before putting them on the smoker

  • Preheat your smoker to 275⁰ using your favorite blend of wood pellets

  • Leave them on the smoker for around 2 hours or until the rub adheres to the meat

  • On top of 2 layers of heavy duty aluminum foil apply a light layer of brown sugar, honey, your favorite rub, half a stick of butter cut into pads

  • Put the rib rack meat side down onto the layers of goodness

  • Carefully add the apple juice

  • Wrap securely

  • Put the wrapped ribs back on the smoker at 275 for about another hour

  • Remove the ribs when the hit a temperature between 204 and 207 degrees

  • Remove the ribs from the foil and brush on your bbq sauce

  • Put back on the smoker for another 10 minute

  • Remove the ribs and let them rest for 5 minutes

  • Cut them up and eat them before anyone else can
